Ingredients:

4 bone-in, skin-on chicken breasts
Salt and pepper to taste
1/2 cup all-purpose flour
4 tablespoons butter
1 onion, diced
2 cloves garlic, minced
1 bell pepper, sliced
1 cup chicken broth
1 cup milk
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional)
Instructions:

Season the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess.

In a large skillet, melt the butter over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and sliced bell pepper. Cook until the vegetables are softened, about 5 minutes.

Add the chicken broth to the skillet and bring it to a simmer. Use a spatula to scrape any browned bits from the bottom of the skillet.

Stir in the milk, dried thyme, paprika, dried oregano, and cayenne pepper (if using). Season with additional salt and pepper to taste.

Return the chicken breasts to the skillet, nestling them into the sauce. Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the chicken is cooked through and tender.

Serve the smothered chicken with the sauce spooned over the top. It pairs well with mashed potatoes, rice, or steamed vegetables.
